Dee, what a very scary situation!

I have heard a self defense guru say that when a person breaks in during the day, they are after your stuff. When a person breaks in at night, they are after you.

It seems to me that what you need immediately has already been mentioned above.

Barking dog, police, and a handgun that you have been trained in so you are proficient.

Please go to a gun range with a licensed instructor and spend hours practicing so your motions and actions are a reflex and you don't need to think.

Just owning a gun will not be enough. You need to be ready emotionally, spiritually, and physically to defend your life even if it involves violence on your part.

Have you thought about a motion sensor security system that will flood your yard with lights and sirens when triggered?

A top notch security system that will call the police when you push the panic button?

I'm not sure what an attorney will do. Don't think a restraining order will keep you safe, because it won't. Someone who is crazy enough to need a restraining order against him/her isn't sane enough to follow that order.

The reality is that the police nowadays are underfunded, overworked, and demoralized. (I had six beefy armed officers show up to escort a skinny kid off the property, and their commanding officer told me to my face that he wasn't going to order them in and put their lives at risk. I lost a lot of respect for them that day.)

If you wait to call them until your neighbor is actually in your house, it will be too late. Your best bet is to collect evidence. Send a letter to your neighbor telling them you don't want them trespassing on your property. Send a copy to yourself, and keep the stamped, sealed envelope for evidence. The only thing a lawyer can do for you is to write an expensive "cease and desist" letter, but I'm not sure that's any better than what you could send.

Make a report to the police. The first reporter tends to be the one that is believed.

Set up security cameras outside and in. I chose Wyze cameras, but there are others. Once you've collected evidence of vandalism, trespassing, etc. file another police report. If you can collect evidence of them threatening you, THEN you can request a restraining order, but it won't be granted unless there's clear evidence of harm being threatened.

The order won't protect you, but if the neighbor violates it THEN they can be arrested and charged. In the meantime, really good locks on windows and doors, as well as motion sensor lights and alarms, will help protect you.
