Just got call from my RE partner about a bear that got hit and died in the yard of our flip house today. That’s a first. Must’ve gotten spooked out of its den. Was heading over to check it out and the game commission called and said they got it picked up.

Lana is right. My uncle harvested a bear about 50 years ago, and his family ate bear meat for months. They served bear at some dinners I went to, and I much prefer venison! The bear meat was tough, gamey, greasy. --76.4.xxx.xxx

Yeah, wild game it’s all in how you cook it. A lot of people expect a tough muscle off of a deer bear to taste like filet mignon and it just doesn’t work like that. Sometimes we have to cook the crap out of it and put it in sloppy Joe’s or chili. --174.249.xx.xxx

We have found that the taste of the meat depends on the kill and the way it is butchered.

If the animal is wounded it will tense up in pain, so the meat will be tough.

If the animal is killed with a clean head shot or if the animal has been raised for meat and humanly killed, the issue is the same. If killed clean or humanly the animal suffers no pain so the meat will be tender.

Also, it depends on how the meat is butchered. If a lot of fat is left or if the outside membrane is left on, the meat will be either greasy or gammy. We remove all of the fat when we butcher and all of the membrane. Also, when filleting a fish the mud vein needs to be removed as that is where the gammy taste comes from.

I learned all of this from my Dad as I grew up on a farm where we butchered all of the meat and fish that we ate. He was a great hunter so I learned from him about hunting also and the proper way to humanly kill what we ate. --67.22.x.x

The more the muscle moves, the tougher it will be too and the slower it has to be cooked.. Shanks aren’t steaks. Filet mignon or back straps are great for high temp quick roasting, grill or sauté. Shanks have to braise low and slow all day. The sex of an animal can affect it too. A buck in rut can be stronger tasting too, especially if any of the scent gland gets into the meat. I haven’t shot a bear yet, but I’ve hunted and eaten them. I’m hoping for coyote one of these days. My wife worries sometimes about the food “shortages”. I tell her not to worry because we’ll eat roadkill. Haha. She knows I’m serious too. --174.249.xx.xxx
