Does anyone else do this in their rental showers, with offset tiles? White subway + black grout.
I was thinking it might add some visual appeal to my rental.
Are there any pitfalls to doing this?

We've done lots of baths with small white hexagonal floor tiles with some black ones sort of a retro look. We also done white subway wall tiles with 1 or 2 rows of black one to make accent stripes. however we've never use black grout with white tiles. --96.237.xx.xx |

I wouldn’t use black grout myself. I think it would look too stark. I’d also use larger tiles to minimize the amount of grout lines.
Grays look really nice with white tile. You could take a look at Houzz to get some ideas of color, size, and pattern combinations. --70.16.xxx.xxx |

Google sesrch for images shows examples. The dark dark gray looks awesome and many images show up. One image included a statement that Joan and Chip use dark gray with white subway tile. Black would be awesome too but I agree a bold contrast. --99.203.xx.xx |

Haven't done it in a rental.
Dark grout really looks nice with white tile. I have white subway with dark brown grout in my own home. I really like it - it coordinates well with the shades of brown in the floor tile. --68.10.xxx.x |

Subway tiles set up is labor intensive, due to the small size of the tiles.
Since I do my own tile work, and since I'm not getting younger, and since it's a rental...why would I choose subway tiles?
Well I don't anymore. These days I install 12x24" tiles and finish a shower in half the time.

We've used 12x12 tiles with a row of fancier tiles along the top: we took the 12x12 sheets and cut them into three rows each to edge the top of the larger tiles. Looked great. We have used grey grout and it looks great.
Black grout will turn white when splashed with soap scum and will look dirtier. A dark grey doesn't show this as much.

Black grout with white tile is very unforgiving. Meaning it will show every imperfection in the installation. If you buy good tile and have a decent installer it will look good, if not it won't look good. If the tile/installer isn't great then white grout will help hide imperfections.
I've done a bunch of subway tiles and prefer the look of a gray grout if it matches the countertops or paint in the room. --208.54.xx.xxx |

I have used the offset tile pattern in showers when using square or rectangular stock -- that's with the standard 1/8" grout line in white.
When I'm going to use a contrast color for the grout, I like charcoal grey or colors to match the cabinets, I'll use a wider grout line with sanded grout.
